Default Recipe: Beef & Cheese Burritos

Beef & Cheese Burritos
Prep: 10 min, Cook: 10 min.

* 1 lb. lean ground beef
* 1-1/4 cups chunky style prepared salsa
* 1/2 lb. cheddar cheese, cubed
* 8 large flour tortillas, warmed
* 2 cups lettuce, chopped
* 2 tomatoes, chopped
* 1/2 cup ripe olives, sliced

Heat a heavy nonstick skillet over medium high heat. Cook beef 6-8 minutes, stirring occasionally until no longer pink. Drain and discard drippings. Stir in salsa and cheese. Cook until cheese is melted. To serve, spoon about 1/3 cup beef mixture in center of each tortilla. Top with a portion of each remaining ingredient. Fold bottom edge up over filling. Fold sides to center, overlapping edges.

Per serving: calories 939, fat 41.4g, 40% calories from fat, cholesterol 101mg, protein 51.5g, carbohydrates 88.6g, fiber 7.0g, sugar 6.9g, sodium 1568mg, diet points 21.3.

Might have to try those out tonight.. I think instead of the ground beef, add in some cut up steak.. MMMMMMMMM

oh yea. just finished polishing off a pound of ground meat and a big slice of pumpkin pie with whipped cream..
